Avocado & Tomato Salsa
To kick off the week we are sharing our favourite "heart-healthy" avocado salsa with all of you. Let's face it, chips and salsa is one of the best quarantine snacks and with the addition of avocado...it adds extra heart-health benefits!
According to a study in Archives of Medical Research, Avocado is packed with monounsaturated fats which help reduce heart disease causing LDL cholesterol.
This salsa is so good I could eat it by the spoonful! Of course the first choice to eat with this dip would be chips, instead have it with healthy whole grain crackers and it will still taste amazing!
1 Large Beefsteak Tomato diced
1 Avocado diced
1/3 cup Red Onion diced
1 Jalapeño (keep the seeds if you like spicy) finely chopped
1/4 Cup Cilantro finely chopped
1 Tbsp Olive Oil
1 1/2 Tbsp Lime Juice
1 Garlic Clove finely chopped
Salt & Pepper to taste
1. Dice onion, tomato, avocado and chop Jalapeño. Add all ingredients to a large bowl and set aside.
2. Finely chop cilantro and garlic, set aside.
3. In a small bowl combine dressing, olive oil, lime, juice, garlic and salt & pepper.
4. Add the chopped cilantro and dressing to the large bowl and mix to combine.
